Negi Shio Tare is a Japanese dip made from finely chopped leek, garlic, sesame oil and salt. It tastes salty and fresh, and yuzu or lemon juice adds acidity. Serve it with yakiniku or grilled chicken.

Ingredients

  • 1 large leek
  • 3 garlic cloves
  • 2 tbsp sesame oil
  • 1 tsp fine sea salt
  • 1 tsp yuzu juice or lemon juice
  • 1 tsp toasted sesame seeds (optional)

Instructions

  1. Wash the leek thoroughly, trim off the dark green parts and chop the white and light green parts very finely.
  2. Peel the garlic and chop it finely, or press it through a garlic press.
  3. In a small bowl, mix the sesame oil, chopped leek, garlic, sea salt, yuzu or lemon juice and the toasted sesame seeds, if using, until the salt has dissolved.
  4. Let the dip rest in the fridge for at least an hour so the flavors can blend.
  5. Stir again before serving and add more salt or lemon juice to taste.
