Ingredients

  • 500 g beef (e.g. chuck roast)
  • 2 liters water
  • 2 large carrots, sliced
  • 3 celery stalks, sliced
  • 2 onions, quartered
  • 4 garlic cloves, whole
  • 1 piece ginger (about 5 cm), sliced
  • 3 star anise
  • 1 cinnamon stick
  • 2 bay leaves
  • 1 tsp fennel seeds
  • 2 tbsp soy sauce
  • Salt and pepper to taste
  • 400 g Asian wheat noodles
  • 4 scallions, finely chopped
  • Fresh cilantro, for garnish

Instructions

  1. Cover the beef with cold water in a large pot and bring to a boil. Skim off the foam, drain, and rinse the meat.
  2. Return the beef to the pot, add 2 liters of fresh water, the carrots, celery, onions, garlic, and ginger, and bring to a boil.
  3. Add the star anise, cinnamon, bay leaves, fennel seeds, soy sauce, salt, and pepper. Reduce the heat and simmer for 1.5 hours, until the beef is tender.
  4. Remove the beef from the broth, slice it, and set aside.
  5. Strain the broth through a fine sieve into a clean pot and keep it hot over medium heat.
  6. Cook the noodles in a separate pot according to the package instructions, drain, and divide among soup bowls.
  7. Arrange the sliced beef on top of the noodles.
  8. Pour the hot broth over the beef and noodles.
  9. Garnish with chopped scallions and fresh cilantro and serve immediately.
