Dessert
Num chak kachan is a traditional Cambodian layer cake, known above all for its colorful layers and sweet flavor. It is made from rice flour, coconut milk and sugar and is often served on special occasions.

Ingredients
- 200 g rice flour
- 400 ml coconut milk
- 150 g sugar
- 1/2 tsp salt
- 3 drops green food coloring
- 3 drops red food coloring
- 3 drops yellow food coloring
- 1 tsp vegetable oil for greasing the pan
- 1 l water for steaming
Instructions
- In a large bowl, mix the rice flour well with the coconut milk, sugar and salt.
- Divide the mixture into three equal parts.
- Color one part with green food coloring, the second with red and the third with yellow.
- Bring the water in the steamer to a boil and grease a heatproof pan with the oil. Start with the green batter, pour a thin layer into the pan and steam each layer for about 5 minutes before you add the next color.
- Repeat until all the layers are used, making sure the top layer has a nice, strong color.
- Let the cake cool, then cut it into pieces and serve.
