Dessert
Num Plae Ai are Cambodian glutinous rice balls with a filling of sweet red bean paste. You boil them in water and serve them warm in sweetened, lightly thickened coconut milk. The shell is soft and sticky, the filling sweet and starchy.

Ingredients
- 200 g glutinous rice flour
- 100 ml water
- 1 pinch salt
- 200 g red beans, precooked and mashed into a paste
- 50 g sugar
- 200 ml coconut milk
- 1 tbsp cornstarch
- 3 drops green food coloring (optional)
Instructions
- In a bowl, work the glutinous rice flour, water and salt into a smooth dough. If you like, add green food coloring to give the dumplings a lively color.
- Take small portions of the dough and flatten them. Put a little bean paste in the middle and close the dough around it so the filling is fully enclosed.
- Shape the dumplings into small balls.
- Bring a pot of water to a boil and add the dumplings. Cook them until they float to the surface, then remove and drain.
- In a separate pot, heat the coconut milk with the sugar and cornstarch until the sauce thickens slightly.
- Add the cooked dumplings to the coconut milk sauce and let them steep for a few minutes.
- Serve warm.
