Snack
Nurungji is a traditional Korean snack made from the crispy layer of rice that forms at the bottom of the pot when you cook rice. This simple dish works as a crunchy snack or as a base for soups.

Ingredients
- 400 g short-grain rice
- 600 ml water
- optional: 1 tsp sesame oil
Instructions
- Wash the rice thoroughly until the water runs clear.
- Put the washed rice and the water in a heavy pot.
- Bring the pot to a boil over high heat, then reduce the heat to low and cover the pot.
- Let the rice simmer for 18 minutes, until the water is absorbed.
- Turn off the heat and let the rice rest in the pot for another 10 minutes.
- Turn the heat up to medium-high and cook the rice for another 5 to 10 minutes, until the bottom is golden and crisp.
- Optionally, drizzle sesame oil over the rice before the final heating for extra aroma.
- Remove the crispy rice from the pot and serve it, or use it for other dishes.
