Nurungji is a traditional Korean snack made from the crispy layer of rice that forms at the bottom of the pot when you cook rice. This simple dish works as a crunchy snack or as a base for soups.

Ingredients

  • 400 g short-grain rice
  • 600 ml water
  • optional: 1 tsp sesame oil

Instructions

  1. Wash the rice thoroughly until the water runs clear.
  2. Put the washed rice and the water in a heavy pot.
  3. Bring the pot to a boil over high heat, then reduce the heat to low and cover the pot.
  4. Let the rice simmer for 18 minutes, until the water is absorbed.
  5. Turn off the heat and let the rice rest in the pot for another 10 minutes.
  6. Turn the heat up to medium-high and cook the rice for another 5 to 10 minutes, until the bottom is golden and crisp.
  7. Optionally, drizzle sesame oil over the rice before the final heating for extra aroma.
  8. Remove the crispy rice from the pot and serve it, or use it for other dishes.
