Main dish
Ốc Len Xào Dừa is a street food dish from Saigon: snails simmered in coconut milk with lemongrass, makrut lime leaves and chili. The sauce is creamy, lightly sweet and hot, and you pull the snail meat out of the shell with a toothpick.

Ingredients
- 500 g fresh snails, cleaned
- 240 ml coconut milk
- 2 stalks lemongrass, bruised
- 4 makrut lime leaves
- 2 shallots, finely chopped
- 3 garlic cloves, finely chopped
- 2 Thai chilies, finely chopped
- 1 tbsp fish sauce
- 1 tsp sugar
- 1/2 tsp salt
- Fresh cilantro for garnish
- 1 tbsp vegetable oil
Instructions
- 1. Heat the oil in a wok or deep pan.
- 2. Add the shallots, garlic and lemongrass and stir-fry for 2-3 minutes until fragrant.
- 3. Add the snails and fry for 5 minutes.
- 4. Add the coconut milk, makrut lime leaves, chilies, fish sauce, sugar and salt.
- 5. Bring everything to a boil, then reduce the heat and simmer for 10-15 minutes until the snails are tender.
- 6. Garnish with fresh cilantro and serve hot.
