Stew
Oden is a warming Japanese dish in which fish cakes, daikon radish, boiled eggs and konjac simmer slowly in a savory dashi broth. The stew is mild but full of flavor, and Japanese cooks make it most often in winter.

Ingredients
Ingredients
- 1.5 liters (6 cups) dashi broth
- 200 g daikon radish, cut into thick rounds
- 4 boiled eggs, peeled
- 200 g fish cakes (such as chikuwa or hanpen)
- 1 block konjac, cut into triangles
- 2 tbsp soy sauce
- 1 tbsp mirin
- 1 tsp sugar
- 1 tsp hot mustard (karashi), for serving
Instructions
Method
- Parboil the daikon in a separate pot of water for 10 minutes, then drain.
- Heat the dashi in a large pot and season it with the soy sauce, mirin and sugar.
- Add all the prepared ingredients (daikon, fish cakes, eggs, konjac) to the broth.
- Simmer over low heat for at least 60-90 minutes so the ingredients absorb the flavor of the broth.
- Serve with mustard.
