Okonomiyaki, often called "Japanese pizza" or a "Japanese pancake", is a popular Japanese dish you can adapt to almost any filling. The name combines "okonomi", meaning "what you like" or "to your taste", and "yaki", meaning "grilled" or "fried". You can make it with whatever ingredients you prefer.

Many people consider the Osaka version the original, and it is the heartier one. In the Hiroshima style the ingredients go on in layers. In Osaka you mix everything together before frying, which gives a thicker, fluffier pancake. The base is cabbage and batter, plus pork belly, squid, shrimp, scallions and sometimes mochi or cheese. You finish it with okonomiyaki sauce, mayonnaise, bonito flakes and seaweed powder (aonori), which add sweet, savory and smoky notes.

Ingredients

  • 2 cups finely chopped green cabbage
  • 1 cup all-purpose flour
  • 3/4 cup water, or dashi stock for more flavor
  • 2 large eggs
  • 1/2 cup thinly sliced scallions
  • 100 g thinly sliced pork belly (or shrimp or squid)
  • Okonomiyaki sauce
  • Japanese mayonnaise
  • Bonito flakes (katsuobushi)
  • Seaweed powder (aonori)
  • Salt and pepper, to taste
  • Oil for frying

Instructions

    Make the batter:

    1. In a large bowl, whisk the flour with the water or dashi until smooth. Add the eggs, a pinch of salt and some pepper and mix well.

    Add the vegetables:

    1. Fold the chopped cabbage and scallions into the batter until evenly mixed.

    Shape the okonomiyaki:

    1. Heat a large pan or flat griddle over medium heat and oil it lightly. For each okonomiyaki, spoon about one cup of the mixture into the pan and shape it into a round pancake. Lay the pork belly slices on top.

    Fry:

    1. Fry the okonomiyaki over medium heat for about 4 to 5 minutes, until the underside is golden and crisp. Flip it carefully and fry the other side for another 4 to 5 minutes, until golden and the pork is cooked through.

    Garnish and serve:

    1. Slide the okonomiyaki onto a plate and drizzle with okonomiyaki sauce and Japanese mayonnaise. Sprinkle with bonito flakes and aonori and serve right away.
