Main course
Omurice is a classic Japanese dish of fried rice with vegetables and meat, wrapped in a fluffy omelette. It usually comes with ketchup on top, and kids love it.

Ingredients
- 2 cups cooked rice
- 1 chicken breast, diced
- 1/2 onion, diced
- 1/2 green bell pepper, diced
- 1/2 red bell pepper, diced
- 100 g frozen peas
- 2 tablespoons vegetable oil
- 4 eggs
- Salt and pepper to taste
- 3 tablespoons ketchup, plus extra to garnish
- 1 teaspoon soy sauce
Instructions
- Heat 1 tablespoon of oil in a frying pan and fry the diced chicken until cooked through.
- Add the onion and the green and red bell pepper and fry until the vegetables soften.
- Add the cooked rice, peas, ketchup and soy sauce and stir-fry everything together for another 5 minutes.
- Season the rice with salt and pepper and set aside.
- Beat the eggs in a bowl with a little salt.
- Heat half of the remaining tablespoon of oil in a clean frying pan, pour in half of the eggs and cook over medium heat until the bottom has set but the top is still slightly runny.
- Spread half of the rice over one half of the omelette, then fold the omelette carefully over the filling.
- Cook the omurice for another minute, then slide it carefully onto a plate. Repeat with the rest of the oil, eggs and rice for the second serving.
- Top the omurice with extra ketchup to taste.
