- 2 garlic cloves, finely chopped
- 200 g pork shoulder, thinly sliced (optional)
- 2 tablespoons tamarind paste
- 2 tablespoons fish sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon sugar
- 1 teaspoon dried chili flakes
- 1/2 cup fresh Chinese broccoli (gai lan), roughly chopped
- 1/4 cup carrots, cut into thin strips
- 2 scallions, sliced
- 1 egg
- Fresh cilantro, for garnish
- Chopped peanuts, for garnish
Instructions
- Soak the rice noodles according to the package directions and drain.
- Heat the oil in a large skillet or wok and fry the garlic briefly.
- Add the pork and stir-fry until almost cooked through.
- Add the tamarind paste, fish sauce, soy sauce, sugar and chili flakes and mix well.
- Add the noodles to the wok and stir-fry, tossing constantly, until hot.
- Add the Chinese broccoli and carrots and keep frying until the vegetables soften.
- Add the scallions and crack in the egg. Stir until the egg is cooked.
