Pad thai woon sen is a tasty variation on the classic Thai dish, made with glass noodles instead of rice noodles. This gives a lighter texture, and the noodles soak up the flavors of the sauce very well.

Ingredients
- 200 g glass noodles
- 200 g firm tofu, cut into cubes
- 2 tbsp vegetable oil
- 2 eggs, beaten
- 100 g fresh bean sprouts
- 1 small carrot, cut into thin strips
- 3 scallions, cut into rings
- 2 garlic cloves, finely chopped
- 2 tbsp fish sauce
- 1 tbsp tamarind paste
- 1 tsp sugar
- 1/2 tsp chili powder
- 35 g peanuts, roasted and chopped
- 1 lime, cut into wedges
- Fresh cilantro, for garnish
Instructions
- Soak the glass noodles in warm water according to the package directions, then drain.
- Heat the oil in a large pan or wok and fry the tofu until golden brown. Remove from the pan and set aside.
- In the same wok, briefly fry the garlic, then add the eggs and stir until set.
- Add the carrots, bean sprouts and scallions and fry for a few minutes, until soft.
- Add the glass noodles, tofu, fish sauce, tamarind paste, sugar and chili powder to the wok and stir well until everything is hot and evenly mixed.
- Divide the dish among plates and garnish with peanuts, lime wedges and fresh cilantro.
