Soup
Phở Bò is a Vietnamese beef noodle soup known for its fragrant broth and tender meat. The soup combines warm spices with fresh herbs. The broth takes time to develop its depth, but the result is worth it. Served with rice noodles and fresh toppings, Phở Bò is a main course and a central part of Vietnamese food culture.

Ingredients
- 500 g beef (e.g. top rump or tenderloin)
- 1 onion, halved
- 1 piece of ginger (about 5 cm), sliced
- 5-6 star anise
- 3-4 cloves
- 1 cinnamon stick
- 1-2 tbsp fish sauce
- 2.5 l water
- 250 g rice noodles
- 30 g fresh herbs (basil, cilantro, mint)
- 2 limes, cut into wedges
- 1 fresh chili, sliced (optional)
- 1 small onion, sliced into rings
- 1 phở bò stock cube
Instructions
- Put the beef in a large pot with the water and the halved onion and bring to a boil.
- Add the ginger, star anise, cloves and cinnamon and simmer the broth for at least 1-2 hours.
- Take out the beef, slice it thinly and set it aside. Pour the broth through a fine sieve to remove the solids and return the liquid to the pot.
- Add the fish sauce and the stock cube and bring the broth back to a boil.
- Cook the rice noodles according to the package instructions and drain them.
- Divide the noodles among bowls, top with the thinly sliced beef and ladle the hot broth over it.
- Serve with fresh herbs, onion rings, lime wedges and chili.
