Main dish
Pla Duk Yang is a traditional Thai dish in which a whole catfish is marinated and grilled over an open flame. The fish is prepared with a variety of herbs and spices that give it a distinctive aroma and a delicious taste.

Ingredients
- 1 whole catfish, about 1-1.5 kg, gutted and cleaned
- 2 stalks lemongrass, finely chopped
- 4 garlic cloves, crushed
- 1 piece galangal, finely chopped
- 4 makrut lime leaves, shredded
- 2 tbsp fish sauce
- 1 tsp turmeric powder
- 1 tsp chili powder
- 1 tbsp palm sugar
- Fresh cilantro for garnish
Instructions
- Wash the fish thoroughly inside and out and dry it.
- In a bowl, mix the lemongrass, garlic, galangal, makrut lime leaves, fish sauce, turmeric, chili powder and palm sugar to make the marinade.
- Rub the marinade over the fish, inside and out. Let the fish marinate for at least 20 minutes.
- Preheat the grill.
- Place the marinated fish on the grill and grill it over medium heat for about 10 minutes per side, until the fish is cooked through and the skin is crisp.
- Transfer the grilled fish to a serving platter and garnish with fresh cilantro.
- Serve the fish immediately, ideally with steamed jasmine rice and a hot chili sauce on the side.
