Pla rad prik is a Thai dish of a whole fish that you fry crisp and pour chili sauce over. The sauce of tamarind, fish sauce, sugar and garlic tastes sweet, sour and hot. Under the crisp skin the flesh stays juicy.

Ingredients
- 1 large white fish (e.g. tilapia or sole), cleaned and gutted
- 120 g cornstarch
- 480 ml vegetable oil for deep-frying
- 4 garlic cloves, chopped
- 2 red chili peppers, seeded and chopped
- 2 shallots, finely chopped
- 60 ml tamarind juice
- 2 tbsp fish sauce
- 1 tbsp sugar
- 60 ml water
- Fresh cilantro for garnish
Instructions
- Pat the fish dry and dust it with the cornstarch.
- Heat the oil in a pan and fry the fish on both sides until golden brown and crisp. Then drain on paper towels.
- For the sauce, heat the remaining oil in a pan. Add the garlic, chilies and shallots and fry until soft.
- Add the tamarind juice, fish sauce, sugar and water and simmer until the sauce thickens slightly.
- Place the fried fish on a serving platter and pour the hot sauce over it.
- Garnish with fresh cilantro and serve immediately.
