Main course
Pla Rad Prik is a classic Thai dish: a whole fish fried until crisp and served with a hot chili sauce. The sauce balances sweet, sour and spicy.

Ingredients
- 1 large white fish (such as tilapia or sole), cleaned and gutted
- 1 cup cornstarch
- 2 cups vegetable oil for frying
- 4 garlic cloves, chopped
- 2 red chilies, seeded and chopped
- 2 shallots, finely chopped
- 1/4 cup tamarind juice
- 2 tbsp fish sauce
- 1 tbsp sugar
- 1/4 cup water
- Fresh cilantro for garnish
Instructions
- Pat the fish dry and dust it with the cornstarch.
- Heat the oil in a pan and fry the fish on both sides until golden and crisp. Drain on paper towels.
- For the sauce, heat the remaining oil in a pan. Add the garlic, chili and shallots and fry until soft.
- Add the tamarind juice, fish sauce, sugar and water and simmer until the sauce thickens slightly.
- Place the fried fish on a serving platter and pour the hot sauce over it.
- Garnish with fresh cilantro and serve right away.
