Main course
Pla tod kratiem is a Thai dish of fish fillets that you dredge in flour, fry until crispy and sprinkle with fried garlic. You toast ten garlic cloves until golden brown, which makes them nutty and mild. Steamed jasmine rice goes well with it.

Ingredients
- 2 medium fish fillets (e.g. tilapia or sea bass)
- 10 garlic cloves, finely minced
- 3 tbsp vegetable oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp sugar
- 60 g flour
- 2 tbsp fresh cilantro, chopped
- 1 lime, cut into slices
- 2 red chilies, optional for extra heat
Instructions
- Peel and finely mince the garlic.
- Rub the fish with salt, pepper and sugar.
- Put the flour on a flat plate and turn the seasoned fish in it until fully coated.
- Heat the oil in a pan and fry the fish over medium heat until golden brown and crispy on both sides.
- Lay the fried fish on paper towels to drain excess oil.
- In the same pan, briefly fry the minced garlic until golden brown. Make sure it does not burn.
- Sprinkle the garlic over the fish and garnish with fresh cilantro.
- Serve with lime slices and, optionally, chopped red chilies.
