Main dish
Rou Si Chao La Jiao is a stir-fry of pork tenderloin in fine strips that you cook in a wok with fresh chilies, garlic and ginger. The cornstarch marinade keeps the meat juicy, and the chilies add heat and a fruity note. Rice or noodles go well with it.

Ingredients
- 400 g pork tenderloin, cut into thin strips
- 2 tbsp soy sauce
- 1 tbsp rice wine or dry sherry
- 2 tsp cornstarch
- 4 fresh green or red chilies, seeded and cut into strips
- 3 garlic cloves, finely chopped
- 1 piece ginger (about 2 cm), finely chopped
- 3 scallions, cut into rings
- 2 tbsp vegetable oil
- 1 tsp sesame oil
- Salt to taste
Instructions
- 1. Mix the pork with the soy sauce, rice wine and cornstarch in a bowl. Let it marinate for 10 minutes.
- 2. Heat the oil in a wok or large pan. Add the garlic and ginger and stir-fry briefly.
- 3. Add the marinated pork and stir-fry over high heat until almost cooked.
- 4. Add the chilies and scallions and keep frying until the meat is fully cooked.
- 5. Drizzle with the sesame oil, season with salt and stir well.
- 6. Serve immediately, ideally with rice or noodles.
