Ruam Mit is a Thai dessert of sweetened coconut milk with tapioca pearls, jackfruit, corn and jelly cubes. It tastes sweet and slightly salty, and the add-ins give you a different bite each time. Eat it lukewarm, or chilled with ice.

Ingredients
- 150 g tapioca pearls
- 960 ml coconut milk
- 100 g sugar
- 1/2 tsp salt
- 150 g chopped jackfruit
- 80 g sweet corn
- 70 g diced water chestnuts
- 100 g agar-agar jelly, cut into cubes
- 90 g cooked adzuki beans (optional)
Instructions
- Soak the tapioca pearls in cold water for at least 20 minutes, then drain them.
- Bring the coconut milk to a boil in a large pot. Add the sugar and salt and stir until both dissolve completely.
- Add the soaked tapioca pearls to the coconut milk and cook over medium heat until the pearls turn translucent.
- Add the jackfruit, sweet corn, water chestnuts, agar-agar jelly and adzuki beans. Stir everything well and simmer over low heat for 5 to 10 minutes.
- Turn off the heat and let the dessert cool to room temperature before serving.
