Main dish
Sach Ko Onsaem is a traditional Cambodian dish in which beef is marinated, dried and then grilled. It is known for its savory flavor and slightly chewy texture. This dried beef is often served as a snack or as part of a larger meal.

Ingredients
- 500 g beef, cut into thin strips
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 2 tbsp fish sauce
- 1 tbsp sugar
- 1 tsp salt
- 2 garlic cloves, finely chopped
- 1 tsp ground black pepper
- 1 tsp chili powder (optional)
Instructions
- Cut the beef into thin strips.
- In a bowl, mix the light and dark soy sauce, fish sauce, sugar, salt, chopped garlic, black pepper and chili powder well.
- Add the beef strips to the marinade and mix well so all the strips are evenly coated.
- Cover the marinated beef and let it sit in the fridge for at least 6 hours or overnight.
- Take the meat out of the fridge and lay the strips individually on a baking sheet, ideally on a rack for better air circulation.
- Dry the meat at low heat (50 to 70 °C / 120 to 160 °F) in the oven or a dehydrator for 1 to 2 hours, until dry but still slightly flexible.
- Briefly sear the dried beef strips on a grill or in a hot pan until crispy.
- Serve hot.
