Main course
Samgyeopsal is thick slices of pork belly that you marinate in soy sauce, sesame oil and garlic, then grill. The outside turns crisp and the inside stays juicy. At the table, you wrap the slices in lettuce leaves with chili.

Ingredients
- 600 g samgyeopsal (pork belly)
- 1 tbsp soy sauce
- 2 tsp sesame oil
- 1 tsp pepper
- 2 garlic cloves, chopped
- 16 fresh lettuce leaves (such as butterhead lettuce or perilla)
- 1 Korean chili, cut into rings
- 200 g rice noodles or side dishes of your choice
Instructions
- Cut the samgyeopsal into slices about 2 cm (3/4 in) thick.
- Mix the soy sauce, sesame oil, pepper and chopped garlic in a bowl. Marinate the pork belly slices in it for at least 30 minutes.
- Preheat a grill pan or grill and lay the marinated slices on it.
- Grill the slices for about 3 to 4 minutes per side, until crisp and golden brown.
- Serve the grilled slices warm with the fresh lettuce leaves and the Korean chili.
- Optional: add side dishes such as rice noodles or kimchi.
