Samgyetang is a traditional Korean chicken soup that Koreans eat to restore their strength. It contains ginseng, a root that Korean cooks and healers have valued for centuries. You simmer a tender chicken stuffed with sticky rice, garlic and ginger until the broth turns fragrant and nourishing. In Korea, people eat it on the hottest days of summer, following the old idea of fighting heat with heat.

Ingredients
- 1 whole chicken (about 1.2 kg)
- 1/2 cup glutinous (sweet) rice
- 4-5 ginseng roots
- 5-6 garlic cloves, peeled
- 1 onion, quartered
- 1-2 slices of ginger
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1-2 scallions (green onions) to garnish
- Water
Instructions
- Soak the sticky rice in water for 1-2 hours. Rinse the chicken well inside and out.
- Stuff the soaked rice into the chicken along with the ginseng, garlic, onion and ginger.
- Put the chicken in a large pot and add enough water to cover it completely.
- Bring the water to a boil, then simmer over medium heat for 1.5 to 2 hours, until the chicken is tender.
- Season with salt and pepper. Garnish with chopped scallions before serving.
