Samlor Prahok (សម្លប្រហុក) – Khmer Fish Soup with Prahok

Samlor Prahok is a simple Cambodian fish soup that lives on prahok. The fermented fish paste belongs in almost every kitchen in Cambodia and gives the broth a deep, salty taste. You fry it with garlic, shallots and lemongrass, make a broth from it and cook fish, small eggplants and water spinach in it. Lime juice and Thai basil freshen the soup. You eat it with plenty of jasmine rice.

Samlor Prahok is a Cambodian fish soup that gets its strong, salty-savory taste from prahok, the Khmer fermented fish paste. Unlike samlor korko, it contains no rice powder and hardly any vegetables beyond Thai eggplants and water spinach. You eat it with plenty of rice.

Ingredients

  • 2 tbsp vegetable oil
  • 3 garlic cloves, finely chopped
  • 2 shallots, finely chopped
  • 2 stalks lemongrass, cut into 5 cm pieces and bruised
  • 2 red chilies, sliced into rings
  • 2 tbsp prahok (Cambodian fermented fish paste)
  • 1 l water
  • 4 Thai eggplants (small green eggplants), quartered
  • 500 g white fish fillet (catfish or tilapia), in 4 cm pieces
  • 200 g water spinach (ong choy), in 5 cm pieces
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 2 tbsp lime juice
  • 10 g Thai basil leaves, for garnish

Instructions

  1. Heat the oil in a large pot. Fry the garlic, shallots, lemongrass and chilies over medium heat for 2 minutes, until the shallots turn translucent.
  2. Add the prahok and fry it for 2 minutes, stirring, until it smells strongly.
  3. Pour in the water, bring to a boil and simmer the broth for 10 minutes. If you want to remove bones and pieces of fish from the prahok, pour it through a sieve back into the pot.
  4. Add the eggplants and cook them for 8 minutes, until soft.
  5. Add the fish and water spinach, turn the heat to low and let everything steep for 5 minutes, until the fish is white all the way through.
  6. Season with sugar and lime juice and taste the soup. Add the fish sauce only if it still lacks salt.
  7. Stir in the Thai basil and serve the soup right away with rice.
