Sānxiá Miàn are noodles from the Sanxia district in Taiwan, served here with a sauce of ground pork, black bean paste and soy sauce. The bean paste makes the sauce salty and savory, while peanuts and cilantro add crunch and freshness.

- 2 garlic cloves, finely chopped
- 100 g ground pork
- 2 tbsp soy sauce

- 100 ml chicken broth
- 2 scallions, sliced into rings
- 1 tbsp roasted peanuts, chopped
- Fresh cilantro, to garnish
Instructions
- Cook the noodles according to the package directions, drain and set aside.
- Heat the peanut oil in a pan and cook the onion and garlic until soft.
- Add the ground pork and cook until it is done all the way through.
- Add the soy sauce, black bean paste and sugar to the pan and stir well.
- Add the chicken broth and simmer the sauce over medium heat until slightly thickened.
