Ingredients
- 2 cups cooked rice, ideally from the day before
- 200 g mixed seafood (e.g. shrimp, squid, mussels)
- 100 g peas, frozen or fresh
- 1 carrot, diced
- 3 scallions (green onions), sliced
- 2 eggs, beaten
- 2 garlic cloves, finely chopped
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- Salt and pepper to taste
- Oil for frying
Instructions
- Heat a little oil in a large pan or wok over high heat.
- Add the garlic and fry briefly until fragrant.
- Add the seafood and stir-fry until almost cooked. Take it out of the pan.
- Pour the eggs into the same pan and stir quickly to scramble them.
- Add the carrot and peas and cook for a few minutes until tender.
- Add the cooked rice and the scallions and stir well.
- Stir in the pre-cooked seafood, soy sauce, oyster sauce and sesame oil.
- Stir-fry everything together for about 5-7 minutes, stirring constantly, until the rice is hot and slightly crisp.
- Season with salt and pepper and serve hot.
