Seolleongtang is a traditional Korean soup made from ox bones, beef and noodles. It is known for its rich, milky, deep flavor, which comes from simmering the bones for hours.

Ingredients
- 1 kg ox bones
- 200 g lean beef
- 2 liters water
- 2 garlic cloves
- 100 g glass noodles
- 4 scallions
- salt and pepper, to taste
- 1 tbsp sesame oil
Instructions
- Wash the ox bones thoroughly and cover them with water in a large pot.
- Bring the water to a boil and boil hard for about 10 minutes to remove impurities.
- Drain the bones and return them to the pot with fresh water. Slowly bring to a simmer over low heat.
- Simmer the bones for at least 6 to 8 hours, skimming off the foam now and then.
- One hour before the end of the cooking time, add the beef and the garlic cloves.
- Take out the beef as soon as it is cooked and slice it thinly.
- Prepare the glass noodles according to the package instructions.
- Strain the soup through a fine sieve to remove all solids.
- Return the clear broth to the pot and add the sliced beef, glass noodles and chopped scallions.
- Season with salt, pepper and sesame oil and serve hot.
