Shān Yào Nián Gāo is a steamed cake of glutinous rice flour and grated Chinese yam, served in China mostly at Lunar New Year. It is sweet, soft and chewy, and the yam adds a mild, earthy note. Wait until it has cooled completely before you cut it.

Ingredients
- 300 g Chinese yam (shān yào), peeled and grated
- 200 g glutinous rice flour
- 150 ml water
- 100 g sugar
- 1 tsp vegetable oil
- A pinch of salt
Instructions
- 1. Peel and grate the yam and set it aside.
- 2. Bring the water to a boil in a small pot, add the sugar and salt and stir until the sugar has dissolved completely.
- 3. Put the glutinous rice flour in a large bowl and slowly stir in the sugar water to avoid lumps.
- 4. Add the grated yam to the batter and mix well.
- 5. Grease a baking pan with the vegetable oil.
- 6. Pour the batter into the greased pan and smooth the top.
- 7. Steam the cake in a steamer over medium heat for about 50 minutes, until firm.
- 8. Let the cake cool completely before serving and cut it into pieces.
