Main course

Sìchuān Málà Huǒguō, known as Sichuan hot pot with its signature "málà" flavor, sits at the center of Sichuan food culture and is famous for its fiery, numbing heat. "Málà" combines "ma" (numbing) and "la" (spicy), which refers to Sichuan peppercorns and plenty of chili. Together they make an intensely spiced broth that you use to cook meat, seafood, tofu and vegetables.

Hot pot is a social meal as much as a dish. Everyone gathers around the table and dips their favorite ingredients into the bubbling, fragrant broth. Each piece picks up the layered heat and spice of the málà broth as it cooks.

Ingredients

  • 2 liters (8 cups) chicken or beef stock
  • 4 tbsp Sichuan peppercorns
  • 5-6 star anise
  • 2 cinnamon sticks
  • 6-8 dried chilies
  • 4 tbsp chili bean paste (doubanjiang)
  • 1 head garlic, halved
  • 1 piece ginger, sliced
  • 2 scallions (green onions), roughly chopped
  • 100 ml (scant 1/2 cup) vegetable oil

Popular ingredients for dipping

  • Thinly sliced beef or lamb
  • Shrimp or other seafood
  • Tofu, cubed
  • Assorted mushrooms
  • Leafy greens such as spinach or napa cabbage
  • Glass noodles or udon noodles

Instructions

  1. Start the broth: Heat the vegetable oil in a large pot. Add the Sichuan peppercorns, star anise, cinnamon sticks and dried chilies and toast them gently until fragrant.
  2. Add the garlic, ginger and scallions and fry briefly.
  3. Stir in the chili bean paste and cook for a few minutes until the oil turns red and separates.
  4. Pour in the chicken or beef stock and bring to a boil. Lower the heat and let the broth simmer gently for at least 30 minutes.
  5. While the broth simmers, prepare the dipping ingredients and arrange them on platters around the hot pot.
  6. Set the hot pot on a tabletop burner. Each guest dips their chosen ingredients into the boiling broth and cooks them until done.
  7. Dip the cooked pieces into sauces such as sesame paste, fermented bean paste or plain soy sauce.
