Soba noodles, made from buckwheat, are a staple of Japanese cooking, known for their nutty flavor and how many ways you can use them. Here you take traditional soba and cook it in a wok, which gives the dish plenty of texture and flavor. Stir-frying, a method rooted in many Asian cuisines, cooks the ingredients fast, so the vegetables stay fresh and their flavor gets stronger. The result is a light, tasty meal for a quick weeknight dinner that also works when you have guests.
Stir-fried soba noodles from the wok

Ingredients

  • 200 g soba noodles
  • 2 tbsp vegetable oil
  • 2 garlic cloves, finely chopped
  • 1 piece ginger (about 2 cm), finely chopped
  • 1 red bell pepper, cut into thin strips
  • 1 carrot, cut into thin strips
  • 100 g snow peas, halved
  • 4 scallions (green onions), sliced into rings
  • 200 g firm tofu, cubed
  • 2 tbsp soy sauce
  • 1 tbsp mirin (Japanese sweet rice wine)
  • 1 tsp sesame oil
  • Optional: sesame seeds and fresh cilantro (coriander) for garnish

Instructions

    Cook the noodles:

    1. Cook the soba noodles according to the package directions, keeping them al dente. Rinse them under cold water to stop the cooking, then set aside.

    Prep the ingredients:

    1. While the noodles cook, prepare the vegetables and tofu. Cut everything into roughly equal pieces so it cooks evenly.

    Heat the wok:

    1. Heat a wok or large pan over high heat and add the vegetable oil.

    Fry the aromatics:

    1. Add the garlic and ginger to the wok and stir-fry for about 30 seconds until fragrant.

    Add the vegetables and tofu:

    1. Add the bell pepper, carrot, snow peas, scallions and tofu and stir-fry for 3-4 minutes until the vegetables are tender but still have some bite.

    Add the noodles and sauces:

    1. Add the cooked soba, soy sauce, mirin and sesame oil to the wok. Toss well and stir-fry for another 2-3 minutes until the noodles are hot and coated in the sauce.

    Serve:

    1. Divide the soba between plates and garnish with sesame seeds and fresh cilantro if you like. Serve right away while hot.
