Ingredients

  • 1 medium green papaya, peeled and finely shredded
  • 1 carrot, peeled and finely shredded
  • 2 small tomatoes, quartered
  • 2 garlic cloves, finely chopped
  • 2-4 small red or green chili peppers, to taste
  • 1/2 cup roasted peanuts
  • 2 tbsp fish sauce
  • 1 tbsp palm sugar or brown sugar
  • Juice of 1-2 limes
  • 2 tbsp dried shrimp (optional)
  • Fresh cilantro, for garnish
  • Green beans, optional

Instructions

  1. Put the garlic and chilies in a mortar and pound to a rough paste.
  2. Add the tomatoes, green beans (if using), palm sugar and dried shrimp and bruise lightly to release the flavors.
  3. Add the shredded papaya and carrot and keep pounding gently so the ingredients are well mixed and the flavors can develop.
  4. Add the fish sauce and lime juice and mix everything well.
  5. Divide the salad among plates and garnish with roasted peanuts and fresh cilantro.
