Salad
Som Tam Thai is a refreshing, crunchy papaya salad made from unripe papaya, peanuts, tomatoes, green beans and a spicy lime and fish sauce dressing. The dish is very popular in Thailand and known for its balance of sweet, sour, salty and hot.

Ingredients
- 1 medium unripe papaya, peeled and shredded
- 2 yardlong beans, cut into 2 cm (1 in) pieces
- 10 cherry tomatoes, halved
- 2 garlic cloves, peeled
- 2 to 4 fresh red chilies, to taste
- 2 tbsp roasted peanuts
- 1 tbsp dried shrimp, optional
- 1/4 tsp palm sugar, or to taste
- 3 tbsp fish sauce
- 1 1/2 tbsp lime juice
- 1 tbsp tamarind paste, optional
Instructions
- Start by pounding the garlic cloves and chilies in a mortar into a rough paste.
- Add the green beans and bruise them lightly to release the flavors.
- Add the halved cherry tomatoes, palm sugar, fish sauce, lime juice and tamarind paste and mix everything well.
- Add the shredded papaya and mix it in with steady pounding to blend the flavors.
- Finally, add the roasted peanuts (and dried shrimp, if using) and mix everything together.
- Arrange the salad on a plate and serve fresh.
