Sudachi ponzu is a Japanese dipping sauce made from soy sauce, mirin, sake and the juice of sudachi, a small green citrus fruit. It tastes salty and sour, and sharper than yuzu ponzu. Use it for dipping gyoza, tempura or grilled fish.

Ingredients

  • 4 sudachi (or limes if sudachi are not available)
  • 100 ml soy sauce
  • 50 ml mirin
  • 50 ml sake
  • 1 tbsp sugar
  • 1 small garlic clove, finely chopped
  • 1 piece (about 2 cm) fresh ginger, finely grated

Instructions

  1. Halve the sudachi and squeeze out the juice.
  2. In a medium bowl, mix the sudachi juice thoroughly with the soy sauce, mirin, sake and sugar.
  3. Add the garlic and ginger and stir well.
  4. Let the sauce rest in the fridge for at least one hour.
  5. Before serving, pour the sauce through a fine sieve to remove the garlic and ginger.
