Salad
Sunomono is a Japanese cucumber salad in a sweet and sour dressing of rice vinegar, sugar, and soy sauce. Wakame adds umami and a light taste of the sea, and you can add imitation crab. The salad works as a starter or as a side dish with sushi.

Ingredients
- 2 cucumbers
- 4 tbsp rice vinegar
- 1 tbsp vinegar
- 1 tbsp sugar
- 2 tbsp soy sauce
- 1 to 2 tbsp wakame (dried)
- 100 g imitation crab (optional)
Instructions
- Wash the cucumbers thoroughly and slice them thinly with a vegetable slicer or mandoline.
- Put the cucumber slices in a bowl and salt them lightly. Let them sit for 10 minutes so they release some liquid.
- In a separate bowl, mix the rice vinegar, vinegar, sugar, and soy sauce well until the sugar has dissolved.
- Soak the wakame in water until soft, then drain it and add it to the vinegar mixture.
- Drain the cucumbers and gently squeeze out the excess liquid. Then add them to the vinegar mixture.
- Optional: add the imitation crab and mix everything well.
- Chill in the refrigerator for at least 10 minutes before serving so the flavors can come together.
