Main course
Shòu Sī Fàn is Taiwanese sushi made of seasoned sushi rice with tuna, salmon, cucumber, and avocado in a nori sheet. Rice vinegar, sugar, and salt give the rice a sweet and sour taste, and the raw fish tastes mild.

Ingredients
- 400 g sushi rice
- 480 ml water
- 60 ml rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 4 nori sheets
- 100 g fresh tuna, cut into strips
- 100 g fresh salmon, cut into strips
- 1 small cucumber, cut into strips
- 1 avocado, cut into strips
- 60 ml soy sauce for dipping
- 2 tsp wasabi
- 40 g pickled ginger
Instructions
- Wash the sushi rice under running water until the water is clear, then let it drain for 30 minutes.
- Put the rice and water in a rice cooker and cook according to the appliance instructions.
- While the rice cooks, combine the rice vinegar, sugar, and salt in a small pot. Heat the mixture until the sugar and salt dissolve, then let it cool.
- When the rice is cooked, transfer it to a large bowl and fold in the vinegar mixture. Let the rice cool to room temperature.
- Lay a nori sheet on a bamboo mat and spread an even layer of rice over it, leaving a small border at the top.
- Lay strips of tuna, salmon, cucumber, and avocado in the middle of the rice.
- Roll up the nori sheet tightly using the bamboo mat. Repeat with the remaining nori sheets.
- Cut each roll into 6 to 8 pieces with a sharp, damp knife.
- Serve the sushi with soy sauce, wasabi, and pickled ginger.
