Tǔ dòu táng, also known as candied sweet potatoes, is a popular Chinese snack. The sweet potatoes are caramelized in a sugar syrup, which gives them a crisp, sweet coating.

Ingredients

  • 2 large sweet potatoes
  • 100 g sugar
  • 1 tbsp sesame seeds
  • Oil for deep-frying

Instructions

  1. Peel the sweet potatoes and cut them into pieces about 1-2 cm thick.
  2. Heat oil in a deep pot and fry the sweet potato pieces until soft and lightly browned.
  3. In a separate pan, heat the sugar with a little water until it dissolves completely and forms a syrup.
  4. Add the fried sweet potatoes to the syrup and stir well so every piece is evenly coated with sugar.
  5. Spread the candied sweet potatoes on parchment paper and quickly sprinkle with sesame seeds before the sugar hardens.
  6. Let the sweet potatoes cool until the sugar has hardened into a crunchy shell.
