Bīng Qī Lín Juǎn is a street food from Taiwan: a thin crepe filled with ice cream, chopped peanuts and fresh cilantro. You roll everything up and eat it right away. In one bite you taste cold ice cream, sweet and salty peanuts and cilantro.
Taiwanese ice cream wrap, Bīng Qī Lín Juǎn (冰淇淋捲)

Ingredients

  • 1 large, thin crepe
  • 1 scoop vanilla ice cream
  • 1 tbsp finely chopped roasted peanuts
  • 1 tsp sugar
  • A pinch of fresh cilantro leaves

Instructions

  1. Prepare the crepe first and keep it warm.
  2. Sprinkle the chopped peanuts and sugar evenly over the crepe.
  3. Place a scoop of vanilla ice cream at one end of the crepe.
  4. Scatter a few fresh cilantro leaves over the ice cream.
  5. Carefully roll the crepe around the ice cream so the filling is enclosed.
  6. Serve the ice cream roll right away so the ice cream does not melt.
