Side dish
Tamagoyaki, the Japanese rolled omelette, is known for its tender, lightly sweet flavor and its layered structure. This recipe shows you how to make it with eggs, mirin and a little sugar. It works as a side dish, in sushi or on its own. It takes a little skill to roll, but the result will please you and your guests.

Ingredients
- 4 eggs
- 2 tbsp soybean oil
- 1 tbsp sugar
- 1 tbsp mirin
- pinch of salt
Instructions
- Beat the eggs in a bowl and add the sugar, mirin and salt. Mix well.
- Preheat a rectangular pan over medium heat and add 1/2 tbsp of the oil.
- Pour a quarter of the egg mixture into the pan and spread it evenly. Let it set briefly.
- When the underside firms up, carefully roll up the omelette sheet and push it to the side of the pan. Add the remaining oil to the pan.
- Add another portion of egg mixture, slide it under the previous omelette roll and roll it up again. Repeat until the mixture is used up.
- Take the finished tamagoyaki out of the pan, let it cool and cut it into even slices.
