Main Course

Japanese tantanmen ramen takes its cue from Chinese dan dan noodles and brings savory, spicy and slightly sweet flavors together in one bowl. You get soft ramen noodles, a rich, spicy broth, ground meat and often a touch of sesame or peanut, which gives the soup its depth. If you already like Japanese food, tantanmen gives you a new set of flavors to try. It warms you up and fills you up, so Japanese cooks make it most in the colder months, but you can eat it year-round.

Ingredients

    Ingredients:

    • 4 servings ramen noodles
    • 400 g ground meat (pork or chicken)
    • 4 scallions, finely chopped
    • 1 tbsp sesame oil
    • 2 tbsp peanut butter
    • 1 tbsp toasted sesame seeds

    For the spicy broth:

    • 1 liter chicken or vegetable broth
    • 2 tbsp soy sauce
    • 2 tbsp mirin
    • 1 tbsp sambal oelek or another chili paste
    • 2 tsp sugar
    • 1 garlic clove, finely chopped
    • 1 small piece ginger, finely grated

    Toppings (optional):

    • Boiled egg (halved)
    • Bamboo shoots
    • Nori sheets
    • Fresh cilantro

    Instructions

      Make the broth:

      1. Bring the chicken or vegetable broth to a boil in a large pot. Add the soy sauce, mirin, sambal oelek, sugar, garlic and ginger. Lower the heat and simmer for 10 minutes so the flavors combine.

      Cook the meat:

      1. Heat the sesame oil in a pan and fry the ground meat over medium heat until cooked through and lightly browned. Add the scallions and fry for another 2 minutes. Stir in the peanut butter and toasted sesame seeds until everything is well combined.

      Cook the noodles:

      1. Bring a separate pot of water to a boil and cook the ramen noodles according to the package directions. Drain and set aside.

      Assemble:

      1. Divide the noodles evenly among four bowls. Spoon the meat over the noodles. Pour the spicy broth gently over the meat and noodles.

      Add the toppings:

      1. Top the tantanmen with boiled egg, bamboo shoots, nori and fresh cilantro as you like.
