Main course
Tekka don is a bowl of sushi rice topped with slices of raw tuna. The seasoned rice tastes sweet and sour, the tuna is mild, and soy sauce and wasabi add salt and heat. Once the rice is cooked, you need just 10 more minutes.

Ingredients
- 300 g sushi rice
- 330 ml water
- 50 ml rice vinegar
- 2 tbsp sugar
- 1 tsp salt
- 300 g fresh tuna (sushi grade)
- 2 tbsp soy sauce
- 1 tsp wasabi
- 1 scallion, finely sliced
- 1 tsp toasted sesame seeds
Instructions
- Rinse the sushi rice thoroughly under running water until the water stays clear.
- Bring the rice and the stated amount of water to a boil in a pot, reduce the heat and simmer for 10 minutes. Take the pot off the heat and let the rice rest for 15 minutes.
- While the rice rests, heat the rice vinegar with the sugar and salt in a small pot until everything has dissolved.
- Spread the vinegar mixture evenly over the rice and fold it in gently.
- Cut the tuna into thin slices.
- Put the sushi rice in bowls and arrange the tuna slices on top.
- Garnish with soy sauce, wasabi, scallions and toasted sesame seeds.
