Nam Manao is a refreshing Thai limeade that balances sweet, sour and a hint of salt. It is just the thing on a hot day. You make it from freshly squeezed limes, sugar and water, and Thai vendors often add salt and sometimes mint for extra freshness.

Ingredients

  • 4 fresh limes
  • 2-3 tbsp sugar
  • 600 ml (2 1/2 cups) water
  • 1 pinch salt (optional)
  • Ice cubes
  • Fresh mint leaves (optional)

Instructions

  1. Wash the limes well and cut them in half.
  2. Squeeze the juice into a large bowl or pitcher.
  3. Add the sugar and a pinch of salt to the lime juice and stir until the sugar has dissolved.
  4. Add the water and stir again.
  5. Taste the limeade and add more sugar or lime juice until the balance suits you.
  6. Fill glasses with ice cubes and pour the limeade over the ice.
  7. Garnish each glass with a sprig of fresh mint, if using.
