Side dish

Khao Niew, or Thai sticky rice, is a staple of many Thai meals. It traditionally goes with dishes like mango sticky rice or grilled chicken (gai yang). This simple recipe shows you how to steam sticky rice to serve as a side.

Ingredients

  • 200 g glutinous (sticky) rice
  • Water, for soaking
  • 400 ml (1 2/3 cups) water, for steaming

Instructions

  1. Put the sticky rice in a bowl and cover it with plenty of water. Let it soak for at least 4 hours or overnight.
  2. Tip the soaked rice into a sieve and rinse it under running water until the water runs clear.
  3. Put the rinsed rice in the steamer basket. Pour the water into the bottom of the steamer, making sure it does not touch the rice.
  4. Steam the rice over high heat for about 20 to 30 minutes, until soft and translucent.
  5. Transfer the cooked rice to a bowl and cover it with a damp cloth to keep it warm.
