Tom Kha Hed is a Thai soup of coconut milk, galangal and fresh mushrooms. You taste lemongrass and kaffir lime, along with acidity from the lime juice and a mild heat from the chili.

Ingredients
- 400 ml coconut milk
- 200 ml vegetable broth
- 1 stalk lemongrass, cut into coarse pieces
- 3 kaffir lime leaves
- 1 piece galangal (about 5 cm), sliced
- 200 g mixed fresh mushrooms (e.g. shiitake, button mushrooms, oyster mushrooms), cleaned and cut into pieces
- 1 small red chili, seeded and cut into thin strips
- 2 tbsp lime juice
- 1 tbsp soy sauce
- 1 tsp sugar
- Fresh cilantro, for garnish
Instructions
- Bring the galangal, lemongrass and kaffir lime leaves to a boil in a pot with the vegetable broth.
- Add the coconut milk and bring to a boil.
- Add the mushrooms and chili and simmer over medium heat for 10 minutes.
- Add the lime juice, soy sauce and sugar and simmer for another 5 minutes.
- Pour the soup through a strainer to remove the galangal, lemongrass and kaffir lime leaves.
- Ladle the soup into bowls and garnish with fresh cilantro.
