Main course
Xiā mǐ zhōu, or shrimp congee, is a soothing and nourishing Chinese dish. It is made from rice cooked in plenty of water to a porridge-like consistency and enriched with shrimp and other flavorings.

Ingredients
- 200 g jasmine rice
- 2 l water
- 200 g fresh shrimp, peeled and deveined
- 1 piece ginger (about 5 cm), peeled and cut into thin slices
- 2 scallions, finely chopped
- 1 tbsp soy sauce
- 1 tsp sesame oil
- Salt to taste
- Freshly ground black pepper to taste
- A pinch of sugar
- Fresh cilantro for garnish
Instructions
- Wash the rice thoroughly until the water stays clear.
- Put the rice, water and ginger slices in a large pot and bring to a boil.
- Reduce the heat and simmer the rice for about 45 minutes, until soft and thick. Stir occasionally so nothing scorches on the bottom of the pot.
- Meanwhile, cook the shrimp in a separate pan with a little oil for about 2 to 3 minutes, until pink and fully cooked.
- Add the cooked shrimp, soy sauce, sesame oil, salt, pepper and sugar to the congee and stir well.
- Simmer for another 10 minutes so the flavors come together.
- Garnish with chopped scallions and fresh cilantro before serving.
