Xian Bing, also known as Chinese stuffed pancakes, is a hearty meal traditionally made with a variety of fillings. This version has a classic filling of ground meat and vegetables, wrapped in a crisp, golden-brown dough.

Ingredients
- 300 g all-purpose flour
- 180 ml warm water
- 1 tsp salt
- 200 g mixed ground meat
- 100 g napa cabbage, finely chopped
- 50 g scallions, finely chopped
- 2 garlic cloves, finely chopped
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp ginger, grated
- 1/2 tsp black pepper
- Oil for frying
Instructions
- Knead the flour, salt and warm water in a bowl into a smooth dough and let it rest for 15 minutes.
- Meanwhile, for the filling, mix the ground meat, napa cabbage, scallions, garlic, soy sauce, sesame oil, ginger and black pepper in a bowl.
- Divide the dough into 8 equal pieces and roll each piece out into a circle.
- Put a generous amount of filling on each circle of dough, fold the dough over it and press the edges together firmly.
- Heat a pan with a little oil and fry the stuffed pancakes over medium heat for 3-4 minutes on each side, until golden brown.
- Drain the finished Xian Bing on paper towels and serve hot.
