Xiang Gu Fan, or rice with shiitake mushrooms, is a classic Chinese dish that is both hearty and aromatic. Fried rice and savory shiitake mushrooms make a simple but satisfying meal.

Ingredients
- 400 g jasmine rice
- 560 ml water
- 25 g dried shiitake mushrooms (about 8)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp sugar
- 4 scallions, chopped
- 2 garlic cloves, finely chopped
- 1 piece ginger (about 2 cm), finely chopped
Instructions
- Soak the shiitake mushrooms in warm water for about 30 minutes, then drain and slice them.
- Cook the rice with the water according to the package instructions.
- Heat the sesame oil in a large pan and briefly fry the garlic, ginger, and scallions.
- Add the shiitake mushrooms and fry for about 5 minutes, until soft.
- Add the cooked rice and stir well.
- Add the soy sauce and sugar and mix everything well. Fry for another 5 minutes, until the rice is hot and slightly crisp.
