Yaki Imo are whole sweet potatoes that you bake in the oven for 90 minutes. The flesh turns soft and tastes of caramel, while the skin stays firm. In Japan, street vendors sell them hot from stone ovens in winter.

Ingredients

  • 2 large sweet potatoes
  • 1 tbsp olive oil
  • 1 tsp salt

Instructions

  1. Preheat the oven to 200°C (392°F).
  2. Wash the sweet potatoes thoroughly and dry them.
  3. Pierce each sweet potato several times with a fork so steam can escape.
  4. Rub the sweet potatoes with olive oil and sprinkle them evenly with salt.
  5. Put the sweet potatoes on a baking sheet and slide them into the preheated oven.
  6. Bake the sweet potatoes for about 1 hour 30 minutes, until soft and lightly caramelized.
  7. Take the baked sweet potatoes out of the oven and let them cool for a few minutes before serving.
