Main course
Yakimeshi is Japanese fried rice made with fresh vegetables and egg. It makes a quick dinner, and you can add shrimp or chicken if you like. The carrots, peas and scallions give it color, and you can change the vegetables to suit what you have in the fridge.

Ingredients
- 250 g cooked rice (ideally from the day before)
- 2 eggs
- 100 g carrots, diced
- 100 g peas (fresh or frozen)
- 3 scallions, sliced into rings
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
- Salt and pepper, to taste
- Optional: cooked shrimp or chicken
Instructions
- Cook the rice the day before and let it cool. Cold rice fries into separate grains.
- Heat the vegetable oil in a large pan or wok and fry the carrots and peas for about 3 minutes.
- Add the scallions and fry for another 2 minutes, until soft.
- Crack the eggs into a bowl, beat them and pour them into the pan. Stir until they set and break up evenly.
- Add the cooked rice and mix everything well. Season with the soy sauce, sesame oil, salt and pepper.
- Last, add the shrimp or chicken if you are using it and toss to combine.
- Keep frying for a few more minutes before serving so the flavors come together.
