Tare is a Japanese glaze of soy sauce, mirin, sake, sugar and ginger that you reduce briefly for yakitori. It tastes sweet and salty with a sharp note of ginger and gives chicken skewers a glossy, dark crust.

Ingredients

  • 100 ml soy sauce
  • 100 ml mirin
  • 50 ml sake
  • 2 tbsp sugar
  • 1 piece ginger (about 2 cm), finely chopped

Instructions

  1. Put the soy sauce, mirin, sake and sugar in a small pot.
  2. Add the finely chopped ginger.
  3. Heat the mixture over medium heat, stirring constantly, until the sugar has dissolved completely.
  4. Simmer gently for about 5 minutes, until slightly thickened.
  5. Strain the ginger out of the sauce and let it cool.
  6. Use the sauce to glaze the chicken while grilling.
