Main course

Yangzhou fried rice is a classic of Chinese cooking and one of the best-known styles of fried rice in the world. It owes its popularity to fluffy rice, plenty of colorful add-ins and a rich flavor. The traditional version contains peas, carrots, ham and often shrimp, so you get sweet, salty and umami notes with a little spice in one bowl. The recipe uses up leftover rice, which makes it a quick, easy everyday meal.

Ingredients

  • 3 cups cooked rice, ideally from the day before
  • 200 g ham, diced
  • 100 g small shrimp, peeled and deveined
  • 2 eggs, beaten
  • 1 medium carrot, finely diced
  • 100 g green peas, frozen or fresh
  • 3 scallions (green onions), finely chopped
  • 2 garlic cloves, finely chopped
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • Salt and freshly ground black pepper, to taste

Instructions

    Prepare the rice

    1. Make sure the rice has cooled completely, ideally overnight, so it fries into separate grains.

    Cook the eggs

    1. Heat a little vegetable oil in a wok or large pan. Add the beaten eggs and stir until just set. Take them out and set aside.

    Fry the ham and shrimp

    1. Reheat the wok and fry the ham for about 2 minutes, until slightly crisp. Add the shrimp and cook until pink and cooked through. Take them out and set aside with the eggs.

    Stir-fry the vegetables

    1. Add more oil to the wok, then add the garlic, carrot and peas. Stir-fry for about 3-4 minutes, stirring constantly, until the vegetables are tender.

    Add the rice and seasoning

    1. Add the chilled rice to the vegetables in the wok and stir well. Add the soy sauce and sesame oil and mix thoroughly. Make sure every grain is coated with sauce and break up any clumps.

Return the eggs, ham and shrimp to the wok

    1. Add the cooked eggs, ham and shrimp to the rice. Stir everything together and fry for 2-3 minutes so the flavors combine.

    Garnish with scallions

    1. Take the fried rice off the heat and scatter the chopped scallions over it.

    Serve

    1. Serve hot right away. Season with salt and grind a little more black pepper over the rice if you like.
