Dessert

Yokan is a traditional Japanese dessert made from adzuki bean paste, sugar and agar-agar. It has a firm, jelly-like texture and tastes sweet. This recipe uses red bean paste for an authentic, rich sweetness.

Ingredients

  • 200 g adzuki bean paste (anko)
  • 500 ml water
  • 5 g agar-agar
  • 100 g sugar
  • 1 tsp matcha powder (optional, for garnish)

Instructions

  1. Bring the water to a boil in a pot.
  2. Add the agar-agar and stir constantly until it dissolves.
  3. Add the sugar and keep stirring until it has dissolved completely.
  4. Add the adzuki bean paste and mix well until the mixture is smooth.
  5. Pour the mixture into a rectangular mold.
  6. Let it cool at room temperature, then put it in the fridge for at least 2 hours, until the jelly sets.
  7. Cut the set jelly into even pieces.
  8. Sprinkle with matcha powder before serving, if you like.
